FOOD: WHAT I EAT IN A DAY

I absolute love watching "What I Eat in a Day" Vlogs on Youtube. I enjoy them both, because I am an absolute foodie (an also a little bit of a fattie) and I love watching aesthetically pleasing presentations of food. I also really enjoy these videos for some inspiration for new recipes and ways to switch up my diet. So this is my attempt at an What I Eat post including recipes. These are some of my absolute Go to recipes that I can whip up in minutes. If you enjoy these type of posts maybe I could actually try to film how I make these foods or do these type of posts more regularly. Let me know in the comments!
For now this is quite a typical day for me. I went to a morning boxing class in my gym that day, which was absolutely exhausting, but also absolutely amazing! I felt quite lazy with my food after this so all of these recipes (if you want them call it that) are really, really simple. What are your go to foods, when you are feeling lazy?
Breakfast: Green Smoothie
I am an absolute breakfast lover, but I realised that if I am not going out for a late brunch with friends in the early morning I am not that hungry and that even if I eat quite a big breakfast I get hungry agan very quickly and am starving by 12 the latest. So now I opt for smoothies instead of forcing myself to have a huge breakfast. This one is one of my favourites. I also had a cup of coffee plus half a liter of lemon water before I went to my morning gym class.
Ingredients
1 banana
1/4 pineapple
1 big handful of spinach
2 tbsp. of chia seeds
Fresh mint
Half a cup of water
Lunch: Simple Daal
I will literally have the ingredients for this recipe at home even if I have just been on a two week holiday. You can use a can of diced tomatoes and a can of coconut milk instead of veggie broth if you have these at hand, which will make the recipe even better, but it´s almost as good in this basic version. I love this with Mango Chutney and Naan, but it also works great with rice and raita. The amazing thing is that it´s an incredibly easy dish you can just adjust to whatever you have at home.
Ingredients
1/2 red onion
1 clove of garlic
Fresh ginger
1-2 cups of red lentils
3 potatoes
1 big handful of spinach
2 tbsp. tomato paste
Veggie broth
Paprika
Coriander
Curry
Cumin
Salt & Pepper
Coconut Oil
Preparation
1. Chop your onions and potatoes, mince your garlic and your ginger.
2. Fry the onions, the garlic, the ginger, the tomato and all spices in coconut oil until they become fragrant.
3. Add your potatoes, your lentils and cover well with veggie broth. Let simmer for 20 minutes.
4. Right before the end add your spinach and enjoy!
Snack: Vanilla Soy Yogurt with fruit
I usually need a little pick me up during the afternoon and this really helps with a sweet tooth. The combination of vanilla yogurt with fresh berries and nectarines is my absolute favourite and is perfect for summer.
Dinner: Veggies with herbed curd cheese
This is literally the definition of a lazy dinner for me. I am an absolute potato head and curd cheese with herbs (which I think is quite German) is the food I missed the absolute most when I am abroad. Yes I know I am weird. I love it with potatoes, cucumber, carrots, peppers... I will put it on almost anything. If I feel really lazy in the evening I will just cook potatoes, cut up some fresh veggies add curd cheese (or your dip of choice) and call it a day.

Ahh, ich selbst bin auch ein absoluter foodie haha! Das Linsen-Rezept werde ich auf jeden Fall mal ausprobieren. Ernährst du dich denn vegan bzw vegetarisch? :)

Eigentlich nicht :D ich mache nur sehr selten Fleisch zuhause und koche selbst viel asiatisch, das ist ja sehr oft vegan :)

Ich bin auch ein grosser Fan von solchen Posts, da man immer wieder neue Inspiration findet. Dein Breakfast-Smoothie mit Spinat, Banane und Ananas sieht super lecker aus.

AntwortenLöschenIm Alltag wenn es schnell gehen soll esse ich oft einfach Massen an Naturtofu oder Räuchertofu pur haha, Karotten mit Sojajoghurt Hefeflocken Dip, Bananensojajoghurtbowls mit Toppingexplosion oder Rawbites, Bohnen und Kichererbsen aus dem Glas, Nüsse und Datteln.. *_*
