Wenn man Essen so sehr liebt wie ich ist der Wechsel von Mamas prall gefülltem Kühlschrank zu der Low Budge-Studentenküche nicht gerade einfach. Ich könnte blitzschnell hunderte von Euro im Monat für Essen ausgeben, aber ohne einen festen Job ist das leider nicht die beste Idee. Gott sei Dank gibt es viele superleckere Rezepte, die kein allzu großes Loch in euer Budget reißen. Eines davon ist dieses indische Curry, das es bei mir in der letzten Woche gab. Dank Kartoffeln und Reis hält es lange satt und ist gerade bei Herbsttemperaturen perfekt.
Being the foody that I am transitioning from my mom´s well stocked kitchen to my low budget student kitchen is not necessarily easy. I could easily spend hundreds of Euros on food per month, but without a steady income that is not really the best idea. Luckily there are a lot of delicious dishes you can make even on a budget. One of them is this amazing Indian Curry I made last week, a perfect comfort food, that will keep you warm in the cold months and your tummy very happy.
Zutaten
1 große Zwiebel
2 Knoblachzehen
6 Kartoffeln
1 rote Paprika
1 Dose Kichererbsen
1 Dose gehackte Tomaten
1 Dose Kokosnussmilch
2 Teelöffel gehackter Ingwer
1 Bund frischer Koriander
Saft einer Limette
Salz, Pfeffer, Kümmel, Kardamom
Zubereitung:
1. Zwiebeln, Knoblauch und Paprika klein schneiden. Kartoffeln schälen und würfeln.
2. Zwiebeln anbraten bis sie leicht braun sind, Paprika, Knoblauch, Chili und Ingwer hinzugeben und kurz anbraten. Wenn nötig, mit etwas Wasser ablöschen.
3. Die Kartoffeln und die gehackten Tomaten hinzugeben und etwa 10 Minuten kochen lassen.
4. Kichererbsen und Kokosmilch hinzugeben und kochen lassen, bis die Kartoffeln weich sind.
5. Koriander hacken und mit Limettensaft und Gewürzen hinzugeben. Das Ganze noch ein bisschen einkochen lassen.
Am besten schmeckt das Curry nachdem es ein paar Stunden gezogen hat und mit Reis und Naan.
1 large onion
2 cloves of garlic
6 potatoes
1 bell pepper
1 can of chickpeas
1 can of chopped tomatoes
1 can of coconut milk
2 tbsp minced ginger
fresh coriander
juice of one lime
salt, pepper, cumin, cardamom
Preparations:
1. Chop the onion and the bell pepper, mince the garlic, peel and cube the potatoes.
2. Sauté the onions until there are slightly brown, then add the garlic, the bell pepper and the minced ginger and let everything simmer. If needed add a little water.
3. Add the potato cubes and the chopped tomatoes. Let everything cook for about 10 minutes.
4. Add chickpeas and coconut milk and cook until potatoes are soft.
5. Chop the fresh coriander and add to the stew. Add lime juice and spices as well and let cook for another ten minutes.
This curry is best after you let it stand for a while, with rice and naan bread.
